We agree with the spirit of actual destruction, hence the deleveling of what is destroyed. (you have to re-build and re-upgrade from scratch every destroyed building after victory, whether as attackers or defenders)
This is also why when a watchtower gets destroyed, most of the upgrades go away because they were based around humanoids managing them. But all static things like walls that weren't destroyed will remain as a ruin.

The thing we are against is nonsensical destruction. Whether manually through pounding buildings or through everything getting reset during a capture. How to justify it? And more importantly, how to make it an engaging feature?

Sieges will be costly already.
You'll have to pay the wagers and have combat expenses throughout the entire campaign of destroying the watchtowers to surround the holding. Then you have to pay the wager and build up one or multiple siege camps that will be lost no matter what. Then you'll have to repair whatever damage you have done to the city when you capture it and will have to replace the surrounding watchtowers and their upgrades.

Adding yet another cost to the whole ordeal, one that is unavoidable through being better at the game, makes it unappealing.
We want sieges to still happen. It is better to have a smaller fee that gets used often than a prohibitive one that rarely triggers.

Question: would you say it wouldn't be worth it to siege a city because you'd have to rebuild it?

Not necessarily, but it would be a barrier to entry.

Imagine a large empire assaulted from all sides. A smaller clan should be able to make a dent and succeed at sieging, yet they would have to pay the cost of destruction they did not cause. While they could technically win the fight through out playing the enemy, they would be punished unfairly through repairs.

It is better that any destruction that occurred was on purpose and caused by a lack of skills from the attackers.
